On Sunday we didn't go to church, because Ethan was sick. Colds are no big deal at our house, but he didn't sound good, and we were planning to start "church shopping." I didn't want to be the new family who spread the germy love.
Instead, I made chicken noodle soup, homemade dinner rolls, and caramel apple crisp. So, still a pretty good day!
Chicken Noodle Soup
Ingredients:
6 cups chicken broth (I make mine by dissolving 1 tsp chicken granules in 1 cup boiling water)
4-5 sliced carrots
2-3 sliced celery stalks
1/2 chopped onion
Chicken (6 boneless, skinless thighs, 2-3 breasts, or whatever you have on hand)
About 1/3 bag of egg noodles (or whatever looks right)
Salt & pepper to taste
Directions:
Add all ingredients except noodles to crock pot. Cook on low all day. When chicken is cooked through, use two forks to shred it. Add noodles and let cook about 10 minutes before serving. Voila!
